cupcakes for my Gun Club mates

Every Tuesday night I attend the Birkenhead Rifle Club and do my target shooting. I spend my time waiting knitting and the guys have kinda got used to my quirky hobbies, so I dont think they're surprised that I'm a cupcake queen. So I whipped up a batch of Halloween cupcakes for everyone at the club tonight since its been ages since I made them any.





Halloween cupcakes!!!

Halloween has always been my favourite time of year so I was really looking forward to making some Halloween cupcakes.

I whipped up these babies on Sunday for my workmates. Vanilla cupcakes with crushed up Jaffa lollies mixed through the batter. It created a lovely swirly effect inside the cupcake and when the red candy shells melted it looks like blood oozing out.

I then topped them with orange buttercream frosting that also had crushed Jaffas mixed through. I then topped them with chocolates that I'd made in the shape of skulls, bats, witches etc. My first attempt at chocolate making but I really had fun.

A few of the cupcakes i decorated with some WIlton sugar toppers in the shape of Pumpkins that I had and was looking forward to using.

the NZCQ does Ginger Kisses

I love Ginger Kisses, especially the ones you buy at the supermarket by Rosedale. So I was really excited to find a recipe in one of my books for ginger kisses.

They turned out great, but I was a little bit let down by the fact that they didnt turn out how I imagined. I like the ginger kisses with the spongey, cakey biscuits with that yummy mock cream between them. The ones I made turned out more like melting moments with ginger. Still yummy, but I shall keep hunting for the perfect ginger kiss recipe!

gluten free cupcakes for Kym

my lovely friend Kym recently starting trying out gluten free eating. Since I didnt want her to miss out on cupcakes I gave gluten free ones a go! I didnt have all the gluten free dry ingredients so I bought a pack of gluten free cake mix. With orange frosting and juicy fruity lollies they tasted pretty good but gluten free cakes do tend to be a bit on the dry side, kinda like cupcakes that are a few days old! Still yummy

Cookies & Cream Cupcakes





I have been wanting to try making Cookies & Cream cupcakes for quite a while. The other day Cassie from How To Eat a Cupcake (http://howtoeatacupcake.blogspot.com/) posted a comment on my page and when I had a look at her cupcake creations, I discovered she was pretty damn good at making cookies & cream cupcakes.

So I used her recipe and the cupcakes turned out great! Didnt last long at all at work and so far workmates have voted these the best I've made since the banoffee cupcakes! I was a bit hesitant at using cake mix because I'm a bit of a baking snob and like to do it from scratch, but these turned out so well I think I've gotten over that.

The NZ CQ is back - with LOLLY CAKE

Unfortunately I've been off work sick the last week and although I've spent lots of time at home, I wasnt even well enough to bake! But I'm back into it now, making up for lost time.

Made this kiwi classic "Lolly Cake" and so far 2 batches have been eaten up by my boyfriend and workmates.

Wayne's birthday cupcakes

Wayne is one of my big cupcake fans so I had to make him some caramel filled, toffee coated cupcakes with jersey caramels on top. And since he's a cabinet maker I popped on some tool candles.
